Citation: February 18, 2011 16:20 hours While conducting an unscheduled HACCP recordkeeping, 03C01 inspection procedure in the QC/HACCP manager's office, I observed this facility's Raw Not Ground, 03C category, Hazard Analysis determines that [redacted] for the fact that letters of guaranty accompany all packaging materials, confirming they are safe and suitable for their intended purposes. [redacted], utilized by this establishment in modified atmosphere packaging (MAP), is addressed in the Hazard Analysis and listed as a packaging material. When I requested a letter of guaranty from [redacted], the supplier of the compressed carbon dioxide gas, Mr. [redacted] QC/HACCP manager, stated that he did not retain on file such a document. This constitutes a failure to comply with the United States Code of Federal Regulations, Title 9, Chapter III, Animals and Animal Products, Section 417.5(a)(1). Mr. [redacted] was notified of the noncompliance by telephone immediately. This document serves as written notification that failure to comply with regulatory requirements may result in additional regulatory and/or administrative action(s).
