Citation: February 13, 2011 11:05 hours While performing an unscheduled 04C04, Finished Product Standards (FPS) assessment at the postchill inspection table in the processing department, I observed five (5) of the randomly selected 10 (ten) chilled chicken carcasses to be contaminated with unidentifiable foreign material (UFM). The material was black in color, of a metallic appearance, nonferrous in nature, ranged in shape from threadlike to flat and roughly circular, and was of varying sizes ranging up to 1 (one) mm at its greatest dimension. The FPS current CUSUM, [redacted] exceeded both the postchill action number and subgroup absolute limits. I directed the bone saw operators to cease cutting and retained the product located on the main conveyor belts by applying the Food Safety and Inspection Service (FSIS) Form 6502-1 #B39718959. To determine the scope of contamination of today's specific production, I opened a waxed cardboard box containing bone-in chicken legs in their immediate container on the verge of being weighed and labeled and palletized in the processing room. UFM similar to that discovered at the postchill inspection table was found on this product. Two (2) cases of this packaged product were retained by affixing the FSIS Form 6502-1 #B39718960. The establishment's QC/HACCP manager, Mr. [redacted] arrested production in the processing department and set about segregating the affected product. This constitutes a failure to a comply with the United States Code of Federal Regulations, Title 9, Chapter 3, Animals and Animal Products, Section 381.76(b). Mr. [redacted] was notified immediately of the noncompliance verbally. This document serves as written notification that failure to comply with regulatory requirements may result in additional regulatory and/or administrative action(s).

381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
