Citation: January 3, 2011 07:38 hours While performing an unscheduled preoperational inspection procedure of the soaker in the salting department, I observed product residue, including fat and feathers, adhereing to the entire length of the auger's shaft. I rejected the soaker by affixing the Food Safety and Inspection Service Form 6502-1 #B39718907. I immediately informed the evisceration department's junior manager, Mr. [redacted] of the noncompliance verbally. As this was a preoperational inspection, no product was observed to be involved. This constitutes a failure to comply with the United States Code of Federal Regulations, Title 9, Chapter III, Section 416.13(c). This document serves as written notification that failure to comply with regulatory requirements may result in additional regulatory and/or administrative action(s).
Regulation:
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
