Citation: December 22, 2010 15:25 hours The following observations were made by [redacted] Food Safety and Inspection Service Evaluation, Investigation, and Analysis Officer (EIAO), while performing a Food Safety Assessment of this facility's process: "The establishment hazard analysis does not include the [redacted] process step that is identified in the flow chart of its written plan. This is a failure to comply with the CFR, Title 9, Chapter III, Section 417.2(a)(2). The hazard analysis for the 03H category for processing poultry feet indicates [redacted]. The temperature of the water used to process poultry is not being monitored by management. This is a failure to comply with the CFR, Title 9, Chapter III, Section 417.5(a)(1)." This document serves as written notification that failure to comply with regulatory requirements may result in additional regulatory and/or administrative action(s).

Regulation:

417.2(a)(2) A flow chart describing the steps of each process and product flow in the establishment shall be prepared, and the intended use or consumers of the finished product shall be identified.

417.5(a)(1) The establishment shall maintain the following records documenting the establishment’s HACCP plan: The written hazard analysis prescribed in § 417.2(a) of this part, including all supporting documentation
