Citation: November 29, 2010 16:15 hours While performing an evaluation of Finished Product Standards and a zero-tolerance inspection for the presence of visible fecal material at the pre-chill inspection table, I observed four chicken carcasses contaminated with a black emulsion of rail dust and machine grease. The contamination was present on the hind quarters of these carcasses. I immediately stopped the production line and apprised junior evisceration department manager, Mr. [redacted] of the noncompliance verbally. I then requested that Mr. [redacted] move the affected product to the reprocessing station and direct an employee to begin cleaning the metal connections between the shackles on the principal production line after the Inside/Outside Bird wash machine. Mr. [redacted] promptly complied with both requests. At 16:19, after observing an employee beginning to wipe down the source of contamination, I restarted the line. This is a failure to comply with the United States Code of Federal Regulations, Title 9, Chapter III, Section 416.4(b). This document serves as written notification that failure to comply with regulatory requirements may result in additional regulatory and/or administrative action(s).

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
