Citation: July 28, 2010 13:55 hours While performing a scheduled operational inspection procedure in the large salting room, the Food Safety and Inspection Service (FSIS) Inspector-In-Charge, [redacted] observed a 55 gallon, white, plastic barrel of a chemical, [redacted], between the loading dock door and palletized [redacted] coarse pretzel salt used in the kashering process of poultry in this facility. Inspector [redacted] rejected the barrel and its contents by applying FSIS Form 6502-1 #B39133021. Mr. [redacted] was immediately verbally notified of the noncompliance. Both the packaging of the salt and factory seal of the barrel were intact. The establishment uses this chemical to [redacted]. The United States Code of Federal Regulations, Title 9, Chapter III, Section 416.4(c) dictates that all chemicals be stored in an appropriate manner, separated by either time or space from edible product. Possible chemical contamination of edible product by an agent whose express application is the sanitization of direct food contact surfaces is of public health significance. This document serves as written notification that failure to comply with regulatory requirements may result in additional regulatory and/or administrative action(s). Regulation:

416.4(c) Cleaning compounds, sanitizing agents, processing aids, and other chemicals used by an establishment must be safe and effective under the conditions of use. Such chemicals must be used, handled, and stored in a manner that will not adulterate product or create insanitary conditions. Documentation substantiating the safety of a chemical’s use in a food processing environment must be available to FSIS inspection program employees for review.
