Citation: At 0735, [redacted] informed me that the Processing Area was released for Pre-Op SSOP Verification. Among randomly selected, high risk, areas of inspection was the Wing Splitter. At 0737 I discovered a black rubber boot encasing two pivotal joint, movable arms, of the Wing Splitter full of rusty, greasy liquid. Regulatory control was taken, affixing USDA Reject tag B39416909 to the Wing Splitter. [redacted] Night QC, was present and notified immediately. [redacted] Third Shift Sanitation Manager, contacted maintenance; who removed a faulty clamp and then cleaned the joint. They replaced the old clamp with a newer, tighter sealing clamp that will temporarily prevent rusty liquid accumulation within the boot and will prevent the grease normally applied to the arm from escaping the boot and adulterating product. Sanitary conditions were satisfactorily restored and regulatory control was released. No product was involved.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
