Citation: Today at approximately 0710 hours, after reviewing the plant's Pre-Op record for today which marked all processing areas were found to be acceptable, I performed my Pre-Op verification procedure. I observed an opening gap formed by the 2 beam covering panels size about 1/2" wide x 12" in length at the corner of an overhead beam which was located above and in between the post chilled poultry cut-up conveyor and the poultry product weighting scale inside the processing room. The opened gap exposing the inner concrete particles. Plant QC manager Mr. [redacted] was notified and shown of the noncompliance immediately. Mr. [redacted] said to me that the opened gap of the beam will be sealed by tonight, and it will be covered with plastic sheet and tap for the time being.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
