Citation: At approximately 0640hrs while performing pre-operational inspection in the cut-up room after the establishment completed their inspection and all records indicated that the cleaning procedures were completed, the following non-compliance was observed. On the latches of both doors of the ice bin, a buildup of a green, slimy, moldy substance was noted. In addition, multiple shreds of what appeared to be fat/chicken skin was noted scattered across the outside wall of the ice bin. The inside of the doors and ice bin were clean and not contaminated and the ice itself was not affected. QC [redacted] was shown the areas of concern and informed of the non-compliance. The affected areas were then cleaned and re-inspected prior to the room being released for use. These findings are in violation, but not limited to 9CFR 416.1, 416.2(b)(2), 416.4(b).


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
