Violation:  416.13(c), 416.4(a), 416.4(d)

Citation: At approximately 0900 hrs, while observing plant operations the following non-compliances were observed. 1) 1 yellow tub filled with ice in processing room was found with black specks imbedded in the ice. Tub and ice were retained and tag # B39416952 was applied. 2) 1 white pipe inside a white vat used to defrost product was found with black mold like residue and unclean/discolored tape. Vat and pipe rejected. Tag # B39416953 was applied. 3) 1 gray vat with frozen product to be thawed out was giving off a fowl odor. 1 pipe also in vat with product had black specks on it. Vat, product, and pipe were all retained. Tag # B39416957 was applied. Production manager and QC were informed of the findings. These insanitary conditions are in violation of but not limited to 9CFR 416.13(c), 416.4(a) and 416.4(d). This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
