Violation:  416.1, 416.4(b)

Citation: At approximately 0645 hrs while performing pre-operational inspection in the cut-up room after the establishment completed their inspection and records indicated all was inspected and passed the following non-compliance was observed. Both the whole bird line and cut-up line had flaking rust on rail and wheels. Some of the rust flakes had fallen off the rail and onto the conveyer table which is located directly underneath both lines near chiller exit. Table was covered with plastic at the time of the findings. QC was informed of the non-compliance. This is in violation of 9CFR 416.1, 416.4(b) and 416.4(d).

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
