Violation:  381.66(b)

Citation: At approximately 0820 hrs while performing a scheduled 03J02 procedure the following non-compliance was observed. With a calibrated thermometer provided by the qc staff, I began taking temperatures of whole chickens exiting the chiller at CCP-3A. The temperature readings ranged from 45 to 50 degrees. I immediately informed production manager and QC of the non-compliance. Product was retained and tag #B40954006 was applied. QC staff retained the remaining product in cooler applying a blue label and monitoring the temperature. At this time loading dock employees were seen taking product that was still clearly labeled and retained by the QC staff before the temperatures were back down to 40 degrees or below and before being released by the QC staff to complete shipping orders. This is in violation of but not limited to 9 CFR 381.66(b). This NR is linked to NR# 0019-2011-17823 issued on 5/24/11. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action. Regulation:

381.66(b)(1) All poultry that is slaughtered and eviscerated in the official establishment shall be chilled immediately after processing so that the internal temperature is reduced to 40 °F. or less, as provided in paragraph
