Violation:  381.66(c)(4), 417.5(a)(3)

Citation: On this date while performing the record keeping component of an 03J01 HACCP procedure the following non-compliance was observed. HACCP form 3 Slaughter chilling for CCP-3B liver does not contain the critical limit monitoring results from the time the livers are harvested at the evisceration line to the time it is chilled to [redacted]. The form only states the time the livers are put into chill tank and the time they are taken out. There is no way of knowing if the livers are [redacted] as stated in the establishments HACCP slaughter plan signed and dated 10/5/10 page 36 under critical limits column. This is in violation of 9CFR 381.66(c)(4) and 417.5(a)(3). Procedure code 03J02 was performed. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.


381.66(c)(4) Giblets must be chilled to 40 F or below within 2 hours from the time they are removed from the inedible viscera, except that when they are cooled with the carcass, the requirements of paragraph (b)(2) of this section must apply. Any of the acceptable methods of chilling the poultry carcass may be followed in cooling giblets.

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
