Violation:  416.13(c), 416.2(d), 416.4(d)

Citation: At approximately 1100 hrs while observing the establishments operational sanitation the following non-compliance was observed. Numerous beads of condensation on white insulated pipe above the crop pulling station in the evisceration room. The pipe is located directly above the evisceration line and runs from the re-hang station to the lung removal station. No product contamination was observed. QC was informed of the findings. These insanitary conditions are in violation of 9CFR 416.13(c), 416.2(d) and 416.4(d). A similar NR was written on 10/11/10 see NR # 0086-2010-17823. for condensation in evisceration department. The establishments corrective action indicated that "2 employees will be designated to be condensation moppers to focus on evisceration area to prevent built-up of condensation". These corrective active actions were ineffective.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
