Citation: At approximately 1720 hrs while observing the establishments operational sanitation in the processing room the following non-compliance was observed. 8 chickens were observed piled up inside the bird washer at the end of chiller. 4 chickens were also seen on the floor in front of round table and another 2 chickens picked up off the floor were sitting on the designated recondition/ inspection station used to conduct 10 bird post chill finished product checks by FSIS and both ecoli and salmonella tests by the establishment. SSOP plan page 6 section 4 states " [redacted]". QC was immediately informed of the findings. A similar NR was written on 9/27/10 see NR 0081-2010-17823. The establishments corrective actions were to post an employee to specifically pick up and re-work dropped chickens in the area. No such employee was seen. Corrective actions were ineffective. These insanitary conditions are in violation of 9CFR 416.1, 416.13(c), 416.4(d) and 416.15(a). This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.
Regulation:
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.15(a) Each official establishment shall take appropriate corrective action(s) when either the establishment or FSIS determines that the establishment’s Sanitation SOP’s or the procedures specified therein, or the implementation or maintenance of the Sanitation SOP’s, may have failed to prevent direct contamination or adulteration of product(s).
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
