Violation: 416.13(c)
Citation: At approximately 1300 hrs during a scheduled 01C02 procedure the following non-compliance was observed. In the cooler the temperature chart recorder was not working. No temperature reading was shown on the digital screen and the chart was not moving. There was no way of knowing the ambient temperature of the cooler. In the freezer the temperature chart recorder was showing a temperature of . It is stated in both the establishments Pre-requisite program(see pg 2 Temperature Monitoring in Cooler/Freezer section 1) and verification plan dated 7/30/10 and updated 9/10/10 that as per 381.66. This is in violation of 416.13(c) and 381.66. This document serves as written documentation that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.
Regulation:
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
