Violation: 416.13(c), 416.4(d)
Citation: At approximately 1635 hrs while observing the establishments operational sanitation in the processing room the following non-compliance was observed. Chickens were seen being picked up off the floor and piled up on the re-work station/ sink. While continuing to observe I watched as employees continued to pile up the chicken. I approached the sink and counted 20 chickens sitting in the sink. SSOP plan page 6 section 4 states "[redacted]." Processing manager was immediately informed of the findings. These insanitary conditions are in violation of 9CFR 416.1, 416.13(c) and 416.4(d). This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.
Regulation:
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
