Violation:  416.2(b)(1), 416.2(b)(2), 416.2(e)(3)

Citation: On 8/19 at approximately 13:05 while in the evisceration room near inspection station #2 I observed a junction box and conduit that appear to be unused and the degrading gaskets hanging from the box. The degrading gasket and open unused conduit could harbor vermin and the degrading gasket is over product and could result in adulteration. Mr. was notified. At approximately 14:20 outside the EO and Pump rooms flowing water was observed by myself and CSI flow under the wall to the producing large wet areas outside of the building. The metal siding was beginning to rust. Standing water can result in unsanitary conditions. Mr. was informed. CSI observed black and green discoloration on the caulking and surface of the exit door by the whole bird bagger. Mold can become airborne and adulterate product so facilities must be maintained to prevent adulteration or contamination. Mrs. was notified and the caulking was washed and bleached to remove the discoloration. This NR is linked to # 69 for similar failures. 416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(e)(3) Prevent adulteration of product, water supplies, equipment, and utensils and prevent the creation of insanitary conditions throughout the establishment;
