Violation:  416.1, 416.2(b)(1), 416.4(b)

Citation: At approximately 1930 hours while performing a scheduled 06D01 procedure task of the establishments Facilities I observed the following: -Two metal bars affixed to the ceiling approximately in the center of the Finished Product Storage Cooler are exhibiting rust and peeling paint on the outside exposed surfaces. -Overhead light fixtures in the Finished Product Storage Cooler are exhibiting peeling paint and oxidation on outside exposed surfaces of the metal base. -Dust on the overhead refrigeration fan guards adjacent the Whole Bird Pack line and Bulk Gas (CO2) Machines. This is a failure to meet 9CFR 416.4(b), 9CFR 416.2(b)(1), 9CFR 416.1. , Assistant QC Director was verbally notified immediately of the non-compliance This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative actions. 416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
