Citation: The following Sanitation Performance Standard (SPS) noncompliance (facilities - structural) has been identified on this date during routine inspection duties and documented with this NR. Noncompliant Condition - the large doorframe between the carcass chill cooler and the smaller upper cooler has deteriorated over time and is in need of repair. Top portion of this doorframe - the white glass board has become detached exposing plywood and insulation, the glass board side panels of the doorframe are not tightly attached to the wall and the corner moldings are missing, leaving a gap at these outside corners approx. 1/4" to 1" wide allowing for possibility of contaminates getting behind the panel. Again, although not as severe similar conditions exist with the door frame leading from the small cooler to the custom processing room; upper casing is loose and sagging. At today's exit meeting I discussed my observations with Mr. and expressed my concern that the conditions noted above are not direct product contact surfaces they do create an environment for unwanted pathogenic growth. This condition also hinders adequate cleaning failing to meet the regulatory requirements in 9 CFR 416.2(b) and 9CFR 416.4(b). No tags were issued at this time with the understanding that Mr. will take corrective action as per 9 CFR416.15 and make the required repairs. Target Date for completion - 30 days from this issuance - Nov.15, 2010 Failure to comply in a time manner may lead to further regulatory action, re; rejection of area / cooler.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
