Citation: At approximately 1300 hrs during inspection of the establishment's retail exemption activities I observed the following noncompliant condition within the establishment freezer.[newline] Shelving containing packaged retail product was found to have an extensive build up of ice on it. Location noted is the corner of the shelf directly underneath the refrigeration unit upon entering the freezer (left hand side - approx. first 2 feet of shelf involved) - ice build up includes all three tiers of shelving and floor; appears to be caused from the leaking of an overhead refrigeration unit, although no dripping was observed at the time of my inspection. Some packaged retail product was observed covered in ice (approx. 10 to 12 packages of various items; pigs feet, beef liver, bag of pork fat noted). US Reject Tag # B21197172 applied. [newline] I immediately notified , Plant Manager of my findings; Mr. then visually observed the noncompliant condition and was verbally notified of the need for corrective action and preventative measures as per 9 CFR 416.15.[newline] Review of the NR File in the Gov't office for the 2011 calendar year did not reveal documented conditions with similar root cause.


416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
