Violation:  416.13(c), 416.4(a)

Citation: At approximately 0800 after being notified by Plant Manager Mr. that the establishment had completed their pre-operational sanitation inspection, I proceeded to perform scheduled ISP procedure 01B02 (pre-operational sanitation inspection). During this procedure I observed the following monitoring noncompliance in the slaughter department. The band saw used to split animal carcasses contained meat, fat, and blood residue on the wheel that holds the blade. At this time Mr. was notified of the noncompliance and the band saw was U.S. Rejected Tag B21197324. A review of the Sanitation Checklist revealed no entries had been entered at the time the noncompliance was observed. A review of previously written noncompliance records written within 90 days revealed none with the same cause.


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
