Citation: At 1045 am while observing chilled beef carcasses in the cooler off the slaughter floor the following noncompliance was observed.Beef Carcass # 478 was found to have several black, brown smudges and drippings on the flank, brisket and front legs. Further observation revealed that this contamination came from the cooling unit directly in front of the carcass. Carcasses to both sides and behind were checked to verify that this was the only carcass contaminated. US retain/ reject tag B39600658 was applied to the carcass and was informed of this. stated that the unit was being worked on by a contractor and that the unit would be cleaned. trimmed the carcass under USDA supervision and the tag was removed.
Regulation:
310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
