Citation: While observing the secondary holding cooler, 5 lambs with tags were found to have numerous grease and wool/hair fragments adhearing to the carcasses. These carcasses were tagged with US retain Tag B39600661. The plant has elected to trim theses carcasses later. A records check shows that on the previous Corrective action Log the lamb carcasses documented in a NR were to be trimmed and moved to the holding cooler for further corrective action. It is assumed that these are the same carcasses. The corrective actions implemented by the plant were not effective.
Regulation:
310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
