Citation: At 0750 I reviewed the Operational Sanitation logs with SPHV [redacted] The following non-compliances were noted: The operational sanitation entry for 4/13 was left blank although the establishment had operated on that date. The pre-operational sanitation log was completely appropriately for that date. This is non-compliance with 9CFR 416.16(a). Mr. was shown this non-compliance visually, informed of it orally and in writing with this record. A similar non-compliance was documented on 1/11/12 under NR#LPA0209010611N. The establishment declined to respond to that NR, however, any further planned corrective actions were ineffective at preventing recurrence. As always you have the right to appeal.
Regulation:
416.16(a) Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOP’s and any corrective actions taken. The establishment employee(s) specified in the Sanitation SOP’s as being responsible for the implementation and monitoring of the procedure(s) specified in the Sanitation SOP’s shall authenticate these records with his or her initials and the date.
