Citation: At 0718 I walked towards the government office. I observed the " Spray Preparation Log" hanging on the wall. The entry for 3-16-12 had already been completed. It had a time of 07:45initialed by Mr. Operations had yet to begin. I approached Mr. and asked him if he had pre-dated and completed the spray preparation log before actually performing the task. He said that the spray would be prepared by 0745 and did not see a problem with this. I informed him, as I did yesterday, that HACCP records need to be annotated at the time of the event per 9CFR 417 and cannot be pre or post-dated. Mr. was shown this non-compliance visually and informed of it orally andin writing withthis non-compliance record.A similar non-compliance was documented on 3/15/2012 under NR# LPA2706034515N/1. As always you have the right to appeal.
Regulation:
417.5(b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry.
