Citation: At 0945 I conducted a routine Fully-Cooked, Not Shelf Stable HACCP task with SVMO [redacted]. I reviewed the Weekly Verification Log from present back to 2/27. I observed entries for direct observation at the following dates and times: [redacted]. The establishment’s approved operating schedule is 0745 through 1615. I spoke with SVMO [redacted] and he indicated to me that there was no overtime approved for these days for the inspector to observe verification of direct observations as required by the agency regulations. This is non-compliance with 9CFR 307.4(a), 417.4(a)(2)(ii) as described in FSIS Directed 12600.2 Section VI. Mr. was informed of this non-compliance orally and in writing with this report and offered an opportunity to be shown it visually. As always you have the right to appeal.
