Citation: On 12/09/2011, while performing verification activities with EIAO Dr. the following deficiencies were noted with the production flow and sanitary packaging of the Summer Sausage products produced. [redacted] During the morning tour and prior to start of operations the condition of the sterilizer was observed and very small fat droplets were observed on the top of the water. If Summer Sausage was dipped in this sterilizer to heat shrink the final package it could be contaminated. This is a noncompliance with 9CFR 416.4(d) which states " Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments." Mr. was informed of this during the EIAO meeting.
