Violation: 310.22(e)(3), 417.5(a)(1)
Citation: While performing an unscheduled records review and observation of carcasses in the chill cooler located off the slaughter floor the following noncompliance was observed. 2 Carcasses were identified as still having approximately 3 inches of spinal cord will in the vertebral column. Carcasses tagged with US Retain tag MPD57516998(animal id 586) and MPD57516999(animal id 590) respectively. A records check revealed that that the plant had documented these animals as having all SRM's removed on the slaughter floor. This noncompliance is a violation of 9CFR 310.22 which states" Specified risk materials must be removed from the carcasses of cattle, segregated from edible materials, and disposed of in accordance with ä 314.1 or ä 314.3 of this subchapter. The spinal cord from cattle 30 months of age and older must be removed from the carcass at the establishment where the animal was slaughtered." and 417.5(a)(1) which states "The establishment shall maintain the following records documenting the establishment's HACCP plan: (1) The written hazard analysis prescribed in ä 417.2(a) of this part, including all supporting documentation." Mr. was informed of these noncompliance's and instructed that failure to follow the regulations can result in further regulatory control action.

310.22(e)(3) Procedures for the removal, segregation, and disposition of specified risk materials. Establishments that slaughter cattle and establishments that process the carcasses or parts of cattle must routinely evaluate the effectiveness of their procedures for the removal, segregation, and disposition of specified risk materials in preventing the use of these materials for human food and must revise the procedures as necessary whenever any changes occur that could affect the removal, segregation, and disposition of specified risk materials.
417.5(a)(1) The written hazard analysis prescribed in §417.2(a) of this part, including all supporting documentation;
