Citation: On 11/02/11 in the morning a check of the SRM program for identifying carcasses over 30 months showed that two carcasses in the processing cooler, #'s 596 and 597 were tagged as over 30 months but the SRM log for animals over 30 months of age didn't have these numbers recorded. 595 was the last on 10/27 and 598 was the first on 10/28. These numbers would have fallen on one of these days. Failure to produce accurate records could result in adulterated or unwholesome product being shipped. Past Similar NRs - Previous Ineffective Plant Actions: instruct employees in proper record keeping procedures. NR: 63-2011 dated 9/23/2011
Regulation:
416.16(a) Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOP’s and any corrective actions taken. The establishment employee(s) specified in the Sanitation SOP’s as being responsible for the implementation and monitoring of the procedure(s) specified in the Sanitation SOP’s shall authenticate these records with his or her initials and the date.
