Citation: While performing an unscheduled Records review with EIAO for the 90 day assessment the following noncompliance was found with the Not fully cooked Not shelf stable bacon record. For Bacon Produced on 09/19/11 and 09/28/11, performed the Monitoring of CCP B6 Stabilization, records review showed that also performed the Direct observation of these productions of Bacon. This is a violation of 9CFR 417.4 which states "Direct observations of monitoring activities and corrective actions; and (iii) The review of records generated and maintained." was notified of this noncompliance and informed that continued failure to properly document verification activities will result in Regulatory Control Action.
