Citation: On August 2 at approximately 10:15 AM while touring the establishment wit EIAO [redacted] during the 30 day visit after the verification plan was initiated the following noncompliance was noted. There was no result listed for the [redacted] concentration titration test on the [redacted] Mixing log for 7/29/2011 or 8/1/2011. CCP B13 under Monitoring states "[redacted] " This is a noncompliance with 9 CFR 417.5(a)(3) which states in part that the establishment must maintain "Records documenting the monitoring of CCP's and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment's HACCP plan." The [redacted] concentration titration is also part of the Slaughter HACCP and Raw Not Ground HACCP plans. Continued failure to meet regulatory requirements could result in further regulatory action.

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
