Citation: On August 2, 2011 at approximately 9:30 AM during a 30 day visit after the start of the verification plan EIAO [redacted] noted the following. 1) On 7/21/2011 (Beef and Lamb sticks) and on 7/28/2011 (Beef sticks) were produced with no record of calibration for the aW meter and pH meter and on 7/28/2011 Beef Jerky was produced with no record of calibration for the aW meter. 2) On 7/5/2011(beef sticks) and 7/18/2011(snack sticks) no results were listed for the calibration of the aW meter and the pH meter. The temperature wheels listed that [redacted]. CCP B4 states under verification "[redacted] " and under CCP B5 verification "[redacted] ." These are noncompliances with 9 CFR 417.5(a)(3) which states in part that the establishment shall maintain "Records documenting the monitoring of CCP's and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment's HACCP plan; the calibration of process-monitoring instruments." Continued failure to meet regulatory requirements may result in further regulatory action.

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
