Citation: At approximately 1100 while touring the plant with PHV Dr. the following non compliance was found in the freezer. On the back wall under their 2 cooling units, 2 areas of frozen water were found to be covering 3 empty boxes and 4 boxes that appear to contain cryovaced beef hearts. The boxes with product were sealed. This is a violation of 9cfr416.2(d) which states" Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided." was informed of this noncompliance and stated that this is a known issue and that the plant would be addressing it. Also failure to follow the regulation can result in further regulatory control actions. A records check revealed that this was not documented on the plants SSOP form.
