Citation: During a Food Safety Assessment (FSA) the following noncompliance was noted by EIAO pertaining to the establishments Generic E.coli Sampling Program. 1) The sampling procedure does not designate the person to perform the sampling. 2) The procedure does not outline sampling randomness, and 3) There is no written explanation on how the sample is handled to maintain integrity. These findings are in violation of 9 CFR 310.25(a)(2)(i).
Regulation:
310.25(a)(2)(i) Written procedures. Each establishment shall prepare written specimen collection procedures which shall identify employees designated to collect samples, and shall address location(s) of sampling, how sampling randomness is achieved, and handling of the sample to ensure sample integrity. The written procedure shall be made available to FSIS upon request.
