Citation: At 0750 hours during a scheduled 01B02 pre-operational review the following deficiencies were observed in the main processing room. 1) In between the meshed blades of the tenderizer were small pieces (1/8th inch or less) of dried product and fat. 2) Packaging materials (vacuum bags, bone guard, and freezer paper) in two grey tubs and in cut down cardboard boxes were observed with small pieces (1/8th inch or less) of dried product and fat on their surfaces. 3) On the surfaces of two stainless steel tables were small pieces (1/8th inch or less) of meat and fat. I informed , the establishment reviewer of my findings and plant personnel immediately began recleaning equipment. These findings are in violation of 9 CFR 416.1, 416.4(a) and 416.13(c). The unclean direct product contact surfaces were not properly cleaned and were not found by the establishment reviewer during their pre-operational sanitation review. The above Items were reinspected and released by myself at 0810 hours. This noncompliance is being linked to NR #15 issued on 04/06/11 as the cause is the same. It is expected that the establishment consider how to make appropriate improvements in the execution of its pre-operational procedures to maintain the establishment in a manner sufficient to prevent the creation of insanitary conditions.
Regulation:
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
