Citation: At 1030 hours during an 03H02 procedure the following noncompliance was noted. The establishment produced bacon on Wednesday (03/06/11). There are no records documenting plant verification for either direct observation or record review on this lot of product. Based on previous records the documentation of verification is listed on "The Bacon Cooking Log". I asked , Plant Manager/Haccp Coordinator for this record and he said he did not have the record. This is in violation of 9 CFR 417.4(a)(2)(ii)(iii)for ongoing verification activities. The establishment Heat Treated-Not Fully Cooked-Not Shelf Stable Haccp Plan lists the verification procedure under CCP B10 (Partial Cooking Bacon) as ". And for CCP B11 (Cooling of Bacons) as ". Monitoring procedures were performed and documented and the written procedures follow compliance guidelines in Appendix A & B. Additional information written at the bottom of each CCP is the following, ". This statement is also in violation of the above cited regulatory requirement. These findings are also in violation of 9 CFR 417.6(b)&(d), in which case this Haccp system may be found to be inadequate.
