Citation: While performing the procedure 06D01 and inspecting the various departments of the establishment found the following non-compliances. In the Ready-To-Eat area or room I observed the following things. The open partition between the new smokehouse and old smokehouse there are two wall panels leaned up against the wall. I observed behind the panels the wall was dirty, debris on the floor and in the adjacent corner and up to the ceiling dirt and cobwebs. Also the two wall panels had cobwebs on them and are dirty. Behind the old smokehouse in the corner observed dirt and debris that needs cleaning. The smoke generator is dirty and needs a cleaning. The Ready-To Eat table used to cut snack sticks into equal portions the table legs are rusty and need attention. The corner adjacent to the table up along the corner to the ceiling has some cobwebs. The two processing rooms need some attention, in the main cut-up room the cooling unit above the cutting table needs cleaning along with the piping. The swinging doors between the two rooms the doors have product residue on them. Also the door jamb have a few holes in the metal and need cleaning. The vacuum machine needs cleaning and the motor underneath is all dusty and the framing needs cleaning. The heating unit in the main cut-up room is rusty. The soap dispenser next to the heating unit is dirty. The wall behind the heating unit is dirty. The other processing room the walls surrounding the knife sharpening area have multiple specks of residue adhered to them. The double swinging doors going into the retail area have product residue on them. The slaughter floor the walls all need cleaning along with the animal hanging area and hog dehairing area. The hoses on the kill floor are dirty and two of the hoses are cracking along their length. The door going out to the ante-mortem pens is all dirty from multiple days of use. The brisket saw used to split carcasses has clear tape on the outside housing of the motor that is frayed and dirty, also the crack in the housing is exposed. The chill cooler and holding cooler all the walls and doors need cleaning. In the chill cooler the scale used to weigh carcasses is getting rusty and the glass covering the scale dial has multiple specks of product residue adhered to it. The support poles in the holding cooler are rusting and need work. The locker/electrical room adjacent to the inedible room needs cleaning and sweeping, also the knife sharpening stones and barrel are dirty. Similar NR's related to aforementioned issues are NR's 27-2010 dated 12/03/2010, 13-2010 dated 08/03/2010 and 16-2010 dated 08/04/2010 respectively.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
