Citation: On this date at approximately 0900 hours I decided to review the establishment's E. coli O157:H7 testing results for 2010 so I could put them into the weekly meeting. After reviewing the E. coli O157:H7 testing procedure first, the written frequency for testing ground beef product is . I then reviewed the results from the 2010 records on file and found that a sample had been taken 3/31/10 to meet the frequency for the first quarter of 2010 but no E. coli O157:H7 sample was taken for the second quarter of 2010. I then continued to review the records on file and found that no sample had been taken for the second quarter for 2009 but had for the first, third and fourth quarter samples dated 3/25/09, 7/31/09 and 12/24/09. I informed of the non-compliances with 9 CFR 417.5(a)(1), 417.5(a)(2), and he stated no samples had been taken for the second quarter for this year.
Regulation:
417.5(a)(1) The establishment shall maintain the following records documenting the establishment’s HACCP plan: The written hazard analysis prescribed in §417.2(a) of this part, including all supporting documentation;
417.5(a)(2) The written HACCP plan, including decisionmaking documents associated with the selection and development of CCP’s and critical limits, and documents supporting both the monitoring and verification procedures selected and the frequency of those procedures.
