Citation: On this date at approximately 1000 hours I did a walk through of the Water treatment/kill locker room, Offal room, Chill Cooler, Kill Floor and stairway to review for any SPS non-compliances as scheduled by the 06D01 PBIS procedure and observed the following non-compliances: Water Treatment/kill locker room: I observed dirt, pieces of trash and debris on the floor, condensation dripping from water pipes in the room. Cobwebs on the ceiling and piping. Offal Room: I observed cobwebs on the ceiling. Also found a 1/2 " opening at the bottom of the metal doors which could allow for the entrance of vermin & pests. Chill Cooler: I observed condensation droplets on the ceiling and rails but no falling condensation or product involved at the time. Kill Floor: I observed in the swine scalding area of the kill floor the floors with dirt, debris and blood spots. Swing doors have a dry blood/fat residue build up. Also in the swine scalding area there is a blue barrel and on that blue barrel I observed rusty equipment, empty bottles, old clothing and a white residue on top of the barrel and running down the side. Stairway: Observed cobwebs on the ceiling and the swinging doors to the processing room with dry blood/fat residue buildup was informed of the SPS non-compliances with 9 CFR 416.2(b)(2), 416.2(b)(3), and 416.2(d)

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
