Violation: 416.13(a)
Citation: While I was performing , an operational sanitation check on the slaughter floor at approximately 1010, the following noncompliance was observed. The carcass splitting saw was observed to have fecal contamination from the previous days production on the handle and under the motor housing, measuring approximately 3 inches by 1 inch. Mr. was informed of this and the saw was cleaned with soap and hot water immediately. Mr. was informed of this noncompliance and that failure to comply with 9CFR 416.13(a) which states: Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. A records review found that this issue was not found during the plants pre-operational check.
Regulation:
416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.
