Citation: At approximately 1400 while observing the condition of the facility the following Sanitation Performance Standard (SPS) noncompliance was observed. When entering the freezer located off the cutting room, condensation was seen accumulating on most of the ceiling. I reached up to touch the ceiling and liquid fell to the floor. The freezer contained numerous boxed products and inspection of these boxes revealed frozen liquid on the surfaces. I notified Mr. Sanitation Manager of my observations. I informed Mr. that the freezer would be US Rejected Tag #B36674011 and all products stored in this area would be US Retained Tag #B36674025. After the regulatory actions were taken the condensation was removed, the products were removed from the contaminated boxes and placed into new boxes, and all product containers were covered with plastic to prevent further possible contamination. During the re-boxing process the product was not observed to be contaminated by the liquid. A review of previously documented (90 days) noncompliance records indicated none with the same cause.

Regulation:

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
