Citation: On this date at approximately 0745 hours while performing a scheduled 01B02 procedure, the following non-compliance was observed: The drain located in the center of the processing room contained roughly eight substantial pieces of fat residue as well as numerous scraps of meat which had accumulated during the course of washing the floor. Non-food-contact surfaces of facilities must be cleaned and sanitized to prevent the creation of insanitary conditions and the adulteration of product. As this was pre-operational, there was no product involved and no adulteration occurred. I notified Mr. verbally and with this written notice. This document serves as written notification that failure to comply with regulatory requirements could result in additional regulatory or administrative action. Past Similar NRs - Previous Ineffective Plant Actions: Management's failure to adequately supervise and monitor student's cleaning operations. NR: 9-2011 dated 5/4/2011

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
