Citation: On this date at approximately 0750 hours while performing an unscheduled 06D02 procedure, the following non-compliance was observed: The cooling unit in the chill cooler had entered the defrost cycle causing beads of condensation to form on the underside of the unit. The water had been dropping from the unit puddling on the floor creating an insanitary condition, as well as falling on beef carcass #12-22-9 which was hanging on the rail beneath the unit, contaminating the product. The carcass was USDA retained with tag # B3773927 and Mr. notified. Ventilation adequate to control condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided. I notified Mr. verbally and with this written document. This document serves as written notification that failure to comply with regulatory requirements could result in additional regulatory or administrative action.

Regulation:

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
