Citation: At approximately 1400 hrs I found the following non-compliance. [newline]The establishment began the day by cutting up un-inspected product. After they were finished processing the un-inspected product the rinsed the equipment and utensils with hot water and returned to processing inspected product. The plant is in non-compliance because their SOP plan states that, “ [redacted].” [newline]9 CFR 416.13(b) states that, “Each official establishment shall conduct all other procedures in the Sanitation SOP's at the frequencies specified.”[newline]This document serves as notice of non-compliance within Federal Regulations 9 CFR 416.13(b).
