Citation: At approximately 0710 hrs I observed the following non-compliances. In the slaughter floor there was hair swine on the de-hairer from previous days use (non-contact). There was also what appeared to be built up fat on the bottom part of the rails on several carts used to move the small grey totes from place to place (non-contact). After informing of the insanitary conditions he proceeded to re-clean both the de-hairer and all of the carts. In the Processing room I found meat/fat pieces on the underside of the removable steel top cutting surface for the band saw (non-contact). On the patty machine's plastic pieces I found several pieces of small fat on the outside in the crevices of the plastic piece (non-contact). After informing of the insanitary conditions he proceeded to re-clean both the bottom of the steel top cutting surface and the crevices of the plastic pieces of the patty machine. This document serves as notice of non-compliance within Federal Regulations 9 CFR 416.13(c) and 416.4(b).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
