Citation: At 0930 hours during the performance of a Sanitation Performance Standard Task the following noncompliances were observed in both the Hog and Cutting Room Coolers. 1) The walls in both coolers are dirty with dried stains on various locations of the wall surfaces, and 2) Dirt and debris was observed on the floors in both coolers. The facilities are required to be maintained in a manner that will not create insanitary conditions or adulterate product. The establishment SSOP does not mention a cleaning procedure/frequency for these coolers; however the coolers are listed as a daily check during pre-op and operational sanitation checks on the establishments SSOP Processing Sanitation Checklist. It was noted that on today's pre-operational checklist all equipment and utensils were documented as acceptable. These findings are in violation of 9 CFR 416.1, 416.2(b)(2), and 416.4 (b). Further investigation revealed no linkage with respect to previous noncompliances with the same cause in the recent past.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
