Citation: While performing an Operational Inspection of the Spice Room at approximately 1:30 pm on 11/29/2011 found the following Non-Compliance.[newline] [newline]In the Spice Room where the containers of spices are on shelves, the shelves need wiping and cleaning. When I wiped my hand along the shelves I felt a sandy residue. In the two corners of the shelves as you walk in and the shelf to your immediate left, the corners have a build up of dirt in the immediate corners. Underneath the bottom shelves I observed cobwebs and some spices in one of the bottom corners. I observed three spring triggered mouse traps on the shelves in three different corners that were not set and were dusty. [newline][newline]The Plant has a written Operational SSOP that states: "[redacted]." I reviewed the records for the past several days and the spice room was checked acceptable for several days. [newline][newline]This is a failure to follow part 416.13 (c), 416.4 (b), and 416.4 (d) of the regulations.


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
