Citation: At approximately 0915 hrs. while performing the review and observation component for the 01C02 procedure, I observed the following conditions in the evisceration department. The line inspectors hang back racks, used for chicken carcasses to be placed for further recondition, were all full to capacity. I also observed the racks, used by employees to transfer the chicken from the inspectors stands to the reprocessing area, were also full and the line inspectors would stop the line until space was made available on their racks. When I proceeded to the reconditioning area I observed the following noncompliance; all the shackles at reprocessing area had multiple chicken carcasses hung on them, chicken carcasses on the racks and all the hang back racks were full resulting in additional cross contamination. I immediately initiated regulatory control action and notified evisceration lead person to stop the line. When the process was brought back into compliance and all affected chicken carcasses were reconditioned I relinquished regulatory control action, approximate down time was 15 minutes. After a review of the plants SSOP records for the evisceration department, no deficiencies were documented prior to my observations. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.
