Citation: At approximately 0615 hrs. I observed the following conditions in the CVP/Marination department while verifying completion of certain facility items on plants PIP list. The window opening leading from CVP ice roller track into the cooler, had an excessive amount of product residue build up on the ledge under the roller track. Also under the track in the cooler area there was debris and product residue around the stainless steel used to seal off area leading from deboning department. I immediately notified the sanitation manager of the noncompliance's and the area was immediately cleaned. While continuing my check of the facilities I observed the following noncompliance's. In the packing department I observed loose caulking approximately 4" hanging from the thigh chute above the packing bins. Moldy and loose caulking, a rusty metal bell cover around the corner of the packing track and an excessive amount product residue build up on the ledge of the window opening leading to CVP/marination department. Also in the ice bin room located in the cvp/marination department, I observed multiple chicken pieces and fat on the floor. I informed QA manager of the noncompliance's. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
